4 tlbs honey
½ cup sugar
1 cup flour
1 tsp baking powder
1 tsp ground ginger
Melt the butter, honey and sugar. Mix in the other ingredients. Preheat the oven to 180c. Put teaspoon sized mounds evenly spaced on a well buttered tray. Cook for 10-12 minutes till golden.
Note; these spread out a lot and need their space on the tray.
P.S These honey snaps are really easy and delicious, if you dislike ginger, you could replace it with something like lime juice, lemon juice or anything that matches the taste of honey really. Also I didn’t make up this recipe, I found it in one of my mother’s cook books, and was so taken by the taste when I made them that I comitted the recipe to memory so that I could share it with you my readers.
